Why do true masters need a kitchen knife with a Convex Grinding blade?
● Convex Grinding is a blade-edge style where the cutting edge has a smaller contact area with the object being cut, resulting in less resistance during slicing and chopping. This leads to better durability and cutting efficiency, making cutting tasks easier.
● Traditional Japanese kitchen knives often feature Convex Grinding blades, while modern ones typically have V-shaped edges (Flat Ground blades). The Convex Grinding blade is usually handcrafted, as there is currently no machine method for manufacturing it. This means that skilled craftsmen are required for its production.
● The principle behind Convex Grinding is that it provides better physical performance when cutting hard and tough materials. This is due to the greater edge angle and bevel angle of the Convex Grinding blade.
